RCS had a wonderful first weekend of June with our beautiful brides. We hosted one wedding at a home in Loudon TN, One at a local church and another at historic Crescent Bend. The weather was perfect, if a little warm, and our teams of chefs, managers and servers received rave reviews from each wedding party. Our thanks to Rhonda (co-ordinator at Crescent Bend) for all of her hard work and help to us. She is always a joy to work with. We also delivered six additional cakes besides those for the weddings we catered. We are looking forward to another busy weekend with the hope that the heat wave might break just a little.

The second and third weekends of June were equally busy with seven events and twenty-nine cakes delivered! One wedding party reserved our services for the entire weekend, from the rehearsal dinner, to the wedding reception, to the post wedding breakfast. Another Crescent Bend Wedding, a christening, a private home and a local church were the Venues for this week.

On June 28 we hosted a wedding reception at a private home in Sevierville. The weather was beautiful as was the mountain view. Camoflage was the fashion of the day and the tables were decorated with live goldfish in vases, summer flowers and pheasant feathers. The menu was a brunch menu that included biscuits with pork tenderloin, fried chicken, sausage gravy, country gravy and chocolate gravy. We also prepared a hashbrown casserole, garlic cheese grits, pear salad w/gorgonzola, ensalada capressa, fruit parfaits and assorted meat quiches. The most popular menu item was waffles freshly prepared onsite by our chef. A cereal station was a big hit with the kids.

On the same day it was our pleasure to host a 50th wedding anniversary. Our bakery, who had an extremely busy week, was able to replicate the original wedding cake from a picture provided by the bride and groom. Menu items included grand fruit and cheese display, breaded stuffed mushrooms, stuffed grape leaves, cheese filled raviloli with alfredo sauce and beef and pork loin carved onsite.

WOW! The first week of July was busy! Our bakery delivered eight cakes on July 3rd and 4th. One was an amazing Independence Cake. You can view it in our specialty cakes on our website. Holston Hills Country Club was the venue for a fabulous wedding. The bride chose a beautiful buttercream white cake with lemon supreme filling. The menu included Spinach salad, beef tenderloin, chicken in creamy wine sauce, mini twice baked potatoes, squash casserole and homemade breads. We also prepared food for a 60th wedding anniversary.

August has been hot and heavy with venues ranging from Mountain Harbor Inn to Riverstone Inn to local churches and private homes. One of the most exciting events for RCS was when we were asked to cater at the home of Pete and Cindy DeBusk for the Leutenant Governor, Ron Ramsey.
Whew! The August Bridal fair has come and gone again and was a huge success! RCS used this opportunity to present some new menu items such as Fried Spaghetti and Meatballs, Lamb and Feta, Cranberry Stuffed Brie, Salad Stacks and Small Plates with Chicken & Pesto.
RCS was also the preferred caterer for MediSPa's Diamond event held on August 21. Foods served included Fresh Pineapple Boats, Homemade Cream Puffs with Shrimp Salad and Chocolate Dipped Berries with White Chocolate Drizzle.
September is starting off hot and heavy with a total of six upcoming bridal fairs between Belk and Dillards and the Nautical Mile annual fundraiser for Mercy Hospital. They will have over twenty-two yachts arriving, three hundred and fifty guests and a silent auction. Menu items will include Crostini with Boursin Cheese, Crisp Endive with Roasted Red Pepper and Onion Cream Cheese and Carved Beef Tenderloin.
